Saffron Production

Growing up in Khorasan where saffron is synonymous with living, I knew saffron as the king of spice. Today at $25,00 a kilogram, it is the most expensive item in our supermarket ! Let’s take a look at saffron production, the most expensive spice in the world.

About 88,000 hectares  of Iranian land is under saffron cultivation each year. Two major saffron producing provinces of Khorasan-Razavi and South Khorasan last winter and drought last summer as the reasons behind the decline in production. There is a anticipated that the area under cultivation will be expanded by 10 percent by the end of the current Iranian year.

Although, saffron is grown in 21 provinces, Khorasan-Razavi and South Khorasan provinces account for 95 percent of the national production. Iranian government plans to extend saffron cultivation to other provinces.
